I'm having a bit of a green thing going on this week by the look of these posts!
Yesterdays peas have been overshadowed by todays snow peas which were on the meal table tonight! Snow peas have been on the menu since Christmas when we ate a couple of kilo's as nibbles before dinner (there were 12 of us!).
Since then we've had lots of stir fries and tonights looked so good and fresh that I snapped a couple of pics to share.
Stir fry
Fry cubes of tempeh in oil till browned.
Remove from pan (or wok if you have one - mine is packed away)
Add a bit more oil and saute the snow peas, and what ever leafy green you have in the garden - I used some pretty, red spinach. Stir.
Some finely chopped garlic and grated fresh ginger.
Keep stirring!
Tamari or soy sauce to taste
Satay Sauce
Fry off one chopped onion in oil until brown (now that I think of it I could have used coconut oil instead of olive - oh well)
Add desired amount of satay spice mix.
Some crunchy peanut butter (just nuts, no additives)
One can of coconut milk or cream ... and a bit of water if it gets too thick
Spoonful of honey, brown sugar or agave nectar
Tamari to taste
Stir while heating and then simmer for 5 mins, stirring.

Serve it all over a bed of rice - I used short grain white mixed with quinoa for a bit of nutrition.
And eat with chopsticks...... just in case you ever go to China! Yes, I've always encouraged the children to use chopsticks on the odd occasion that we have stir fries.... and yes, one of them has been to China!
